Ras el Hanout Spice Rub Ras el Hanout is a complex mix of spices that is found in various forms in Tunisia, Algeria and Morocco. Ours is all about the balance of sweet and savoury – cinnamon, nutmeg and allspice compliment celery salt and white pepper. Use to marinade meats and fish, stir into rice or couscous or add to tagines and casseroles.
Sweet and Smokey Spice Rub
Ottolenghi's Sweet and Smokey Blend warms everything up. It pulls together savoury, smokey and sweet to build layers (upon layers) of flavour. The touch of sweetness creates a caramelised glow when roasted. Try it as a steak rub, tossed over vegetables or as a finishing salt. Our favourite way? Caramelised bacon jam.
Berbere Spice Rub: Berbere is a mix of sweet and savoury spices from Ethiopia and Eritrea. The exact blend varies from region to region but its backbone is always fenugreek, ginger and paprika. It’s complex, robust and incredibly aromatic. Ours uses nutmeg for an added sweetness. Toss it with vegetables before roasting, use it as a dry rub on pork or poultry before grilling, or stir into yoghurt and serve with fruit.
